This is an Irish Stout, also known as dry Stout. Originally a mistake, Stout is a direct descendent of Porter. Grain is kilned to varying degrees. The more it’s kilned the darker it gets, and the more the sugars are caramelized. Some long ago (yet still famous today) brewer, let’s say, “over-kilned” the grain for his porter. Being a thrifty sort, he threw the dark, roasted grain into the brew anyway. The result was so popular that it eventually drove Porter completely out of the market place and into obscurity for centuries. Goes well with Vanilla, Cherries, Chocolate, etc.
